What I Ate Wednesday- Hey it’s Reading Week!

I love holidays. I mean who doesn’t? No school/work, waking up without an alarm, doing whatever you want all day, every day. That’s life.

Although it is still bitterly cold and winter-like, I have been enjoying some time outside when the sun is out playing with my pup and boy it really feels good to breathe fresh air.


You know what else is really good? Fresh juice.

IMG_4872This particular combo was 1 small beet, 1 asian pear, 1 lime, and a few handfuls of romaine lettuce. Truly energizing.

I’m also really loving simple meals that come together fast, full of good-for-you ingredients that are satisfying and nutritious.

IMG_5072Brown rice, avocado, purple cabbage, steamed veggies, and nutritional yeast.

For snacks I usually love having some of my cheater’s almond milk with a chocolate date mousse cup adapted from Empowered Sustenance.

IMG_4865You guys have to try the almond milk, it is super easy to make and tastes amazing!

IMG_4869The Chocolate Mousse tastes so unbelievably rich, sweet and creamy, you could serve this at a gourmet restaurant and receive rave reviews! I will post my recipe for it on Friday.

And lets not forget dinner…

IMG_4851I was very fortunate to find a health food store near me that stocks grass-fed meat at an incredibly affordable price. I bought grass fed beef’s tongue (a spanish delicacy) and then compared it to another beef tongue I had bought at my local grocery store. The conventional beef cost $11/kg while the grass fed one cost me only $4/kg! Goes to prove that eating locally, humanely raised meats is well worth the price.

Beef tongue is a tougher cut of meat and therefore you must first pre cook it in a slow cooker or pressure cooker and then finish cooking it in a sauce made of tomatoes, onions, spices, and white wine. Besides being very nutrient dense, beef tongue becomes incredibly tender and delicious when cooked. Here I served it over some cauliflower rice. Best meal ever.
